First Lunchbox Post!

My preferred lunchbox to pack for myself would probably be the Yumbox Panino.  It is compact enough to fit in a small, soft sided lunchbox, but packs a ton!  I can also pack larger items, like sandwiches or salads, in the entree sized compartment along with a few sides.  The best part?  Totally leakproof due to the lid that molds to the outline of each compartment!

Today's lunch was chicken salad with 3 tiny pita pockets, and cherry tomatoes.  Sides were Kerrygold cheese cubes, plums, and chocolate tarts!  It was our last warm Louisiana day, so I made sure to pack a lunch that is a hit in the hot summertime!

Welcome to Our Lunchbox!

My first blog post! Yay! My desire is to share pictures of our daily school lunchboxes, and hopefully give readers a few ideas to use for themselves.  I have been guilty more than once of throwing together a PB&J at 10 pm or running into a local grocery store on the way to school to grab a *gasp* Lunchable for the kids to eat.  We eat very healthy at home, and I decided to make healthy lunches a priority as well.  

I have 2 young children in public school, so we prep 2 lunch boxes daily.  Even after many federal mandates on school lunch programs in our state, there are days that I am amazed that the food was able to be served!  My kids are not picky eaters, but do appreciate foods that are healthy and nourishing to their little bodies! They were completely on board with being "lunch packers" each day! 

We live in central Louisiana, which is usually warm year-round, so we have the luxury of being able to send cold lunches most of the time.  I use a variety of lunch boxes and lunch containers, and try my hardest to send a variety of healthy options!  I hope you continue to check out our page and spread the word to your friends!
